Methi bindi fry / masala is a quick side dish for roti, which is not only easy to make with less ingredients but also very healthy. I have used kasoori methi in this recipe, as i live in malaysia, where fresh methi leaves is not easily available. Normally i make bindi masala or aloo bindi, but wanted to try kasoori methi in bindi for a long time so tried it, and it became a instant hit. Here you go for the recipe..
Ladies Finger / Okra / Bindi - 1/4 Kg
Onion - 1
Kasoori Methi - 1& 1/2Teaspoon
Turmeric Powder - A generous pinch
Red chilli Powder - 1/2 Teaspoon
Mustard Seeds - 1/2 Teaspoon
Jeera Powder - 1/2Teaspoon
Garam masala - 1/2 Teaspoon
Lemon juice - 1 Teaspoon
Oil - 1 Table Spoon
Wash and pat dry bindi's. Cut in to inch long pieces. slice onion and tomatoes and keep it aside. In a pan heat oil, add mustard seeds to it, when it splutter add sliced onion and cook until it becomes soft. Now add kasoori methi and fry well, later add bindi, sprinkle salt and fry it well for 3 minutes. Now add red chili powder, turmeric powder, jeera powder, Garam masala and mix well. switch off the flame. Lastly add lemon juice to it.Toss well. so that the masala and bindi will mix evenly. Tasty Methi bindi fry is ready to serve with hot phulkas or roti's.
Half tomato sliced can be added lastly to the masala.
Chat masala can be sprinkled.
