Here is a easy and very tasty rice variety Zucchini rice. An ideal lunch box recipe. This requires less of ingredients, yet tastes so good. Lets straight away go for the recipe....
Basmathi Rice - 1 Cup
Shredded Zucchini (with skin) - 1 Cup
Butter - 1 Teaspoon
Oil - 1 Table Spoon
Mustard Seeds - 1/2 Teaspoon
Cumin Seeds - 1/2 Teaspoon
Dry red chillies - 4
Bay Leaves - 2
Cinnamon Stick - 1/2 inch piece
Water - 2 Cups
Lemon Juice - 1 Teaspoon
Fried dry grapes - Few ( optional for garnishing )
Wash and soak rice for about half an hour drain and keep aside.
Heat oil and butter in a pan, then add mustard seeds, cumin seeds, bay leaves, cinnamon, dry chillies, and add the rice and stir fry for about 2 minutes. Then add water, zucchini, salt, lemon juice, mix well and bring it to a boil.
When rice comes to a boil, lower the flame and cover the pan, and cook until the rice becomes tender and there is no moisture. Tasty zucchini rice is ready in no time :-)
Serve zucchini rice with raita, pappad, chips.
Instead of zucchini you can add spinach.
Shredded cheddar cheese can also be added while serving.
