Tomato soup is every one's favorite. Nothing can be as comforting as a bowl of home made tomato soup. Try this tomato soup which is easy to make and more important very healthy. I have replaced corn flour / All purpose flour with carrots to give a healthy substitute.This also provides body and rich color to the soup.....
Tomato (Ripe) - 6 (Medium Size)
Garlic - 2 Cloves
Carrot - 1/4 (Medium Size)
Onion - 1/2 (Medium Size)
Sugar - 1/2 Teaspoon
Oil - 1/4 Teaspoon
Butter - 1/2 Table Spoon
Bay Leaf - 1 No.
Pepper corns - 4 to 6 Nos.
Salt - As per Taste
Crushed Roasted Pepper - 1/4 (Adjust accordingly)
*Dry Italian Mixed herbs - For seasoning
Wash and cut the tomatoes in to quarters. Peel and chop the garlic, Cut the carrot in to roundels. Peel and slice onions. Now heat oil and butter (you can replace with Olive oil too) in pan, and add bay leaf, pepper corns, now add sliced onions and saute till translucent. Add chopped garlic and stir-fry briefly. Now add carrots and tomatoes, stir-fry for a minute and add 1& 1/2 cups of water to it, and bring it to a boil, cook covered for 10 minutes. Now strain the blended mixture through a strainer. Reserve the liquid. Remove the peppercorns and bay leaf from the residue and allow it to cool, make it to a smooth puree. Now add the reserved liquid to the puree and mix well (Adjust the consistency) and transfer to a pan, and simmer for couple of minutes add salt and crushed pepper, and season with Italian mixed herbs or any Italian herb. Slurp ... the very healthy tomato soup with toasted bread pieces on top :-)
*You can use fresh basil leaves (Sauteed n chopped) also
Adding any Italian herb gives a nice fragrance to the soup. So don't skip it.
I have used carrot to give body to the soup, as it also enhances the color of the soup, more over healthy too :-)
